Ebisu Kanji

As part of the next generation of sushi, Ebisu Sushi & Bar concocts modern creations while still paying respect to traditional flavors. Chef Jay Choy creates a whimsical menu, elevating classics and reimagining sushi using the freshest ingredients available.

Local ingredients, truffle oil, fire torches, micro greens, and unique sauces made from scratch are just some of the effects you’ll find paired with such standards as Maguro, Hamachi, Sake, Uni, Hirame and Kanpachi.

Whether in the form of a specialty roll or signature sashimi, you’ll taste every element. The chefs take pride in the craft while the entire staff strives to make you feel at home.

The kitchen provides some non-sushi fare such as the famous calamari with a tangy garlic aoli, hamachi kama grilled to smoky perfection, and the must-try garlic edamame, among others.
